Blueberry Pancake Cupcakes!

I’m a huge breakfast fan! One place I can always count on satisfying those cravings are my beloved diners. I love diners because I can order breakfast anytime of the day without judgement (well maybe a little judgement from my not-so-breakfast-loving boyfriend) BUT that doesn’t matter because as long as I can order some pancakes there are no worries! Who doesn’t want a tall stack of blueberry pancakes anyway? Blueberry pancakes may be one of my all time favorite breakfast foods which is why I’m extremely excited to introduce this recipe. A blueberry pancake cupcake with maple frosting. Too good to be true? (Can you tell I’m hungry?) With that said – let’s get started with this yet again super simple recipe. I was thrilled I didn’t need to run out to the grocery store for anything. The ingredients are familiar enough that they are probably packed away in your refrigerator and cupboards. Let’s go!

Ingredients:

1 cup Butter – room temperature
1 1/2 cup Sugar
3 Eggs
2 Egg Whites
3 1/2 cup Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Salt
1 tbsp Cinnamon
1/2 tsp Nutmeg
1 cup Sour Cream
1/3 cup Milk
1 tbsp Vanilla
1 1/2 cup Fresh or Frozen Blueberries

Note: I used fresh whole nutmeg and fresh blueberries!

Maple Buttercream Frosting:

2 sticks Butter – room temperature
1 8oz package Cream Cheese – room temperature
4 cup Powdered Sugar
2 tsp Vanilla Extract
1/2 cup Maple Syrup

Note: You can add less or more maple syrup depending how strong you’d like the maple flavor! Also, I used fresh blueberries and cinnamon sugar for decoration.

Directions:

1. Preheat oven to 350 degrees F. Line cupcake pan. Makes a little over 2 dozen cupcakes.

2. In electric mixer, beat butter and sugar until fluffy. Once light and fluffy add eggs and egg whites one at a time until each is fully incorporated.

3. In medium bowl combine flour, baking soda, baking powder, nutmeg, salt, and cinnamon.

4. Combine wet ingredients together – milk, sour cream, and vanilla. Set aside.

5. Add flour mixture to electric mixer in three additions, alternating with milk, sour cream, and vanilla.

6. Fold blueberries into mixture.

7. Fill cupcake cups about 2/3 full. Bake for 16-18 minutes. Allow to cool in pan for 5 minutes before removing. Make sure cupcakes are completely cool before frosting.

Maple Buttercream Frosting:

1. In electric mixer beat cream cheese and butter on medium/high speed until smooth.

2. Add powdered sugar one cup at a time. Continue to mix on low/medium speed.

3. Add maple syrup and vanilla extract. Continue to mix until combined.

4. Make sure cupcakes are cool before frosting.

5. Decorate cupcakes as desired!

White Chocolate Raspberry Cupcakes

I’ve never been a fan of white chocolate. If I’m going to indulge in a chocolate treat it won’t be white chocolate, but when it comes to cooking with it that’s a different story. I love baking with white chocolate. It creates such rich flavors and it doesn’t matter what kind of dessert it’s incorporated with; cookies, brownies, but most importantly cupcakes! A white chocolate cupcake – wonderful. Now imagine a white chocolate cupcake with raspberry filling – phenomenal. This pairing of a decadent cupcake and a tangy fruit filling will leave anyone wanting more! These cupcakes are always the first to go. Devoured – just like that. If you’re looking for a cupcake that’ll leave an impression you must try this recipe. On the other hand, be prepared for a future of requests because they’ll be asking for these for the next year! Now do you believe me? These cupcakes are that good!

Ingredients:

1 Box Betty Crocker White Cake Mix
1 3.4 oz. package White Chocolate Instant Pudding
4 Egg Whites
1 cup Sour Cream
3/4 cup Vegetable Oil
1/2 cup Milk
1 tsp Vanilla Extract
1/4 tsp Salt

Raspberry Curd Filling:

Note: To find the recipe just click on the link! I’ve used it in another great recipe! Also, I suggest making the raspberry curd before the cupcakes because you should cool and refrigerate before filling.

Cream Cheese Frosting:

1 8 oz. package Cream Cheese – room temperature
1 stick Butter – room temperature
2 tsp Vanilla Extract
2-3 cups Powdered Sugar

Directions:

1. Preheat oven to 350 degrees F. Line cupcake pan. Makes about 18-20 cupcakes.

2. In a medium bowl combine cake mix, pudding mix, and salt.

3. In electric mixer mix egg whites and sour cream until combined. Add vegetable oil, milk, and vanilla extract and continue to mix until well combined.

4. Add dry ingredients to wet ingredients. Mix on medium speed until smooth.

5. Fill cupcake liners about 2/3 full. Bake for 18-20 minutes. Allow to cool in pan for 5 minutes before removing. Make sure cupcakes are completely cool before filling and frosting.

Raspberry Curd Filling:

Cream Cheese Frosting:

1. In electric mixer, add cream cheese and butter. Beat until combined and smooth.

2. Add powdered sugar one cup at a time. Mix on medium/high speed until creamy.

3. Add vanilla extract and continue to mix.

4. Once everything is combined – frost your cupcakes! But make sure they’re cool!

May BarkBox Review!

Yes! Finally we’ve caught a glimpse of sunshine and let me tell you it’s been great! Sunshine and warm weather welcomes lots of fetch games with Ani. She’s obsessed with tennis balls lately, just trying to pry them out of her mouth is a challenge. This tennis ball obsession has led to an obsession with just about anything that resembles a ball. This BarkBox quenched this newly discovered obsession which I’ll elaborate on further throughout the post. Ani was also excited to find a squeaker toy that passes for her favorite feline friend, Moe. (Yes, it’s a kitty) Wow – can’t forget two, yes two, bags of really yummy, yet healthy treats. Let’s just say this months BarkBox was worth the wait, but aren’t they all? It’s hard to pick a favorite when they’re all so great and different.

Let’s begin with Ani’s favorite toy – it’s a Megalast Ball by JW Pet! Why is this ball the best? It’s vibrant red color and funky shapes make this ball unlike most, which is why Ani’s obsessed. The holes and shapes make it easy to grip, which is great for a game of tug of war with her doggy brother, Piper. My favorite aspect of this product is its safety. This product is certified non-toxic; free of lead, antimony, arsenic, barium, calcium, chromium, mercury, and selenium. I’m sure all dog mommy’s appreciate that!

Meow! Yes, I’m in love with this adorable kitty-shaped toy! Who doesn’t like a cute kitty squeaker toy? Ani sure does (even at 1 AM when some of us are trying to sleep). Ani squeaks all around the house, which is a helpful hint when trying to find her! Loopies does a fabulous job catering to our pups!

Max & Ruffy’s haven’t disappointed in the past so I was confident these healthy treats wouldn’t disappoint either. These strawberry and carob flavored treats are perfect for a summer snack! Every ingredient is human grade – yes! These organic treats are wheat, corn, soy and GMO free! There are absolutely no artificial flavors and they’re low fat! Perfect for our weight challenged pups. Ani loves these irresistible treats.

No Grainers by Nooties delivers delicious jerky chews! (Ani told me they were delicious) These BBQ chicken flavored treats are also grain-free! Isn’t it wonderful that our pets are fed so well these days? It’s great to know my dogs eat just as well as I do. These soft jerky pieces are great to give whole or easy to break into tiny pieces. Enjoy those jerky chews, Ani sure did!

April BarkBox Review!

Ani has had a pretty exciting month; she celebrated a birthday (she turned one on the 18th!), met some new doggy friends, enjoyed some beautiful Spring weather, and received her BarkBox! The best part of it is, Ani’s BarkBox was delivered on her birthday! What a great birthday gift! (Not that she didn’t get three brand new toys earlier that day.) I was thrilled my little birthday girl could enjoy another great birthday surprise! We opened that brown box to lots of goodies. Talk about spoiled pup! Five items and all for her? I’d say she’s one lucky girl. She couldn’t resist getting her cute button nose right in that box.

I’ll start off with Ani’s favorite gift. Once she got her mouth on this there was no getting it away from her. This adorably spooky toy is a product of Loopies. It’s much more durable than most squeaker toys. It’s long legs make it excellent for a game of tug-o-war and it’s tennis ball head makes it great for a game of fetch! Ani is obsessed.

Have you ever opened a bag of dog treats and wondered how these smell better than your own food? These treats smell great. I couldn’t believe it! These soft, chewy, and grain-free treats make great training treats. They are slightly small for larger dogs. Off-Leash treats did a nice job capturing Ani’s attention!

Riley’s Organics did an awesome job making sure our pets are held to the highest standard. These treats are free of corn, soy, wheat, sugar, and preservatives! It’s great knowing our dogs are given the same opportunity to live a healthy and smart lifestyle. Feeding your dog the right products makes all the difference.

Oh Barkworthies – my pooch is thoroughly impressed with your 100% beef bladder yummy treat. Maybe not very tempting for us human owners, but Ani sure enjoys it! This is a great alternative from the traditional rawhide chew. These bully sticks are chemical and preservative free making them a favorite in my household.

Who doesn’t enjoy a smoothie? Us humans shouldn’t be the only ones who can enjoy one – what about our pups? Mr. Barksmith answered our dogs prayers! They’ve created a carrot cake smoothie treat just for our canine friends. This smoothie treat consists of apples, bananas, and carrots; pop it in the freezer for a cold treat or as it is! This yummy blend of fruits and veggies was a favorite.

March BarkBox Review!

It arrived! BarkBox has entered the building. Yes, we really are that enthused over our monthly gifts. This month was no disappointment. (surprise, right?) This month’s box was inspired by the most important meal of the day; it’s breakfast! I couldn’t wait to open it up and rummage through all the goodies. Halt! First I (more importantly Ani) was greeted with a ruv note. This BarkBox never ceases to amaze me. Once we read our ruv note, which I’ll have photographed below, we began removing the items one by one. Love it, love it, love it, really love it, and of course love it. It’s safe to say we were completely and utterly pleased.

The items:

Although it didn’t last as long as I’d wished it had, Ani says it was worth it. This leather toy is made to look like a piece of bacon! It also has a lovely squeaker inside which is super exciting to Ani. This bacon toy made by Aussie Naturals is 100% natural, eco friendly, and made with rescue tested leather and coconut fibers. I’m sure it would’ve lasted longer with most pups, but I own destructo puppy! Overall, she loved it!

I’m very impressed with this toy. This toy, made by Safemode, was interesting because it had many qualities. This bone shaped toy is:

-oven and freezer safe
-safe for your entire family
-tested to children’s toy safety standards
-free from cancer-causing chemicals, phthalates, and BTA
-made from durable, yet flexible food-grade, non-toxic silicone
-dishwasher safe and bacteria resistant

It’s hard to believe one dog toy can have so many beneficial qualities. There’s no chance of bacteria, which is expressed as a real concern today. It’s pleasing to know that our animals, especially, our dogs are being protected from hazardous chemicals and materials. I’m thrilled that pet industries have cleaned up the quality of their merchandize in order to keep our families best friends safe. This toy is a total winner in my eyes.

Treats! Hurray! Ani says thank you Wagatha’s for these delicious organic breakfast biscuits. They’re wheat-free, lactose-free, and are made with ingredients like apples, bananas, and cinnamon. If there wasn’t a little smiling dog on the front of the box I would probably eat one myself! They sound scrumptious.

Ani is one lucky girl because there are more treats! This is the best part of the box, right? Ani wants to thank Happy Howie’s for the tasty sausage link goodies! These treats are great. They’re made with real turkey and best of all – NO corn, wheat, artificial colors or preservatives. A healthy treat you’ll feel good about giving your dog.

BarkBox isn’t skimpy with their treats, which Ani appreciates. Have you ever enjoyed salmon for breakfast? Well your dog is about to. Baker’s Best has created Wild Pacific treats that are made with real salmon and glazed with a maple-blueberry compote. I think my dogs breakfast themed treats sound better than my breakfast! Spoiled pups!

Pineapple-Carrot Cake Cupcakes

You know when you’re in the mood for something specific, but you can’t put your finger on it? That’s where I was at. I was in the mood for a sweet, yet savory cupcake. I racked my brain for a while and then decided I wanted to make a moist and flavorful carrot cake cupcake, but I wanted to jazz it up! Pineapple! Yes, I said pineapple and I promise it was a great decision. A pineapple carrot cake cupcake. Pineapple is easily one of my favorite fruits. It’s sweet, yet tangy, which adds a special touch to this carrot cake recipe.

Don’t feel too guilty about sinking your teeth into this cupcake! Just think, you’ll be getting your fruits and veggies!

Time to get started!

Ingredients:

4 Eggs
2 cups Flour
2 cups Sugar
2 tsp Baking Powder
1 tsp Salt
1 1/2 tsp Cinnamon
1/2 tsp Baking Soda
3/4 cup Vegetable Oil
1 tsp Vanilla Extract
3 cups Carrots – finely shredded – about 6 medium carrots

Pineapple Filling:

1 Egg Yolk
1/4 cup Canned Crushed Pineapple – well drained!
3 ounces Cream Cheese – room temperature
2 tbsp Sugar
Pinch of Salt

Note: It’s very important that the pineapple is well drained.

Cream Cheese Frosting:

1 8-ounce package Cream Cheese – room temperature
1 stick Butter – room temperature
2 tsp Vanilla Extract
2-3 cups Powdered Sugar
2-3 tbsp Toasted Shredded Coconut – Optional

Note: I love coconut and wanted to add as a garnish! You could even add sprinkles.

Cupcake carrot

Directions:

1. Preheat oven to 350 degrees. Line cupcake pan. Makes about 18-20 cupcakes.

2. In a large bowl, combine flour, sugar (2 cups), baking powder, baking soda, cinnamon, and salt.

3. In electric mixer, mix eggs on medium speed. Add carrots, vanilla, and oil – continue to mix on medium/low speed.

Note: Make sure carrots are finely shred. Long thick pieces are no good.

4. Once egg mixture is combined add flour mixture. Continue to mix on medium speed.

Note: Do not fill cupcake liners before the filling is made.

Pineapple Filling:

1. In electric mixer, beat cream cheese and sugar (2 tbsp) until combined.

2. Add egg yolk and salt. Continue to beat on medium/high speed.

3. Fold in pineapple.

Filling cupcake liners-

4. Add 1 tbsp of cupcake mix.

5. On top of the cupcake mix, add 1 tsp of pineapple filling.

6. Fill remainder with cupcake mix (over top of pineapple filling) about 2/3 full.

7. Bake for 20 minutes. Allow cupcakes to cool before frosting.

Cream Cheese Frosting:

1. In electric mixer, add cream cheese and butter. Beat until combined and smooth.

2. Add powdered sugar one cup at a time. Mix on medium/high speed until creamy.

3. Add vanilla extract and continue to mix.

4. Once everything is combined – frost your cupcakes! But make sure they’re cool!

Toasted Coconut: (2 Methods)

Oven Method-

1. Set oven to 325 degrees. Should take about 5-6 minutes to toast coconut.

2. Place coconut on a cookie sheet. Make sure to spread it out.

3. Stir every couple minutes to prevent the coconut from burning. Should be slightly browned.

4. Remove from oven and allow to cool for a few minutes.

Stove Top Method-

1. Place coconut in a skillet oven medium heat.

2. Stir frequently until coconut is slightly browned.

3. Remove from heat and transfer to bowl or plate. Allow to cool.

February BarkBox Review!

February didn’t disappoint. BarkBox was delivered to my front steps yesterday. Was I thrilled to see that box waiting for me(I mean Ani)? Yes. I couldn’t wait very long to open the little brown box! As soon as I stepped foot inside I grabbed the scissors and popped that box open, folded back that adorable gift wrap, and there they were; the goods! There were five items made up of treats and toys. My Wheaten, Ani, knew something exciting was happening as she walked her paws up the kitchen counter trying to check it out. A squeak! Ani’s favorite noise. It was a new baby (we call Ani’s stuffed animal toys babies). She and I knew this was going to be a great box…

The items:

Who doesn’t like a eco-friendly stuffed toy? Ani sure does. This penguin from Sprocket Pet Goods is great! It’s colorful, organic, and recycled. It’s vibrant blue color is inviting. The cotton is organic and recycled. There’s a squeaky center and a bouncy bottom! It actually resembles a cute version of a bowling pin while it bobbles and wobbles around. I love everything about this toy. Eco-friendly got me!

I don’t know about you, but my dogs (especially Ani) have terribly bad breath. When I saw Twistix I couldn’t wait to open that bag and immediately pop one in each of their mouths. What are Twistix? They are treats, but not just any treat. These are treats that clean teeth and freshen breath! These are all-natural wheat/corn free vanilla mint twisted sticks. The minty freshness lingered out of their mouths – boy was I happy! Very pleased.

Treats! More treats! These are my favorite. These are grain/gluten free lamb treats by Superior Farms. These heart-shaped biscuits are just a reminder of how much we really love our pets.

What are these bully flakes all about? I wasn’t sure because I had never used them nor have I needed to. These are for picky eaters. Spread the flakes over your picky eaters food and voila! Like magic, they eat! (This is what I’ve heard at least) Anyway, these bully flakes are 100% ground bully sticks which are a bull’s genitals – yes shocking! That’s all I’ll say.

A Heartland Premium bone! These bones look like they’ll last a lifetime – very appetizing! (Just make sure you rip that plastic off before your pup snags it out of their box – it looks that delicious) These bones are sourced from cows born and bred in Omaha, Nebraska. Enjoy!

Pumpkin Chocolate Chip Cupcakes

I’ll be honest, I’m not a huge fan of pumpkin pie. During the holidays you best believe you’ll come across countless numbers of pumpkin pies. Rarely do I venture down that road, no thank you. A Pumpkin Chocolate Chip Cupcake? Yes please. Although I rarely enjoy a slice of pumpkin pie, I do enjoy this pumpkin cupcake. This cupcake has a nice balance between the mini chocolate chips and the rich pumpkin flavor. The chocolate frosting adds the special kick to top it off. The chocolate/pumpkin combination is super – love this recipe!

P.S. – I love working with pumpkin. It’s easy to cook with, makes the house smell great, and reminds me of fall. If you’re a fall lover, try this recipe asap.

Ingredients:

1 cup Butter (room temperature)
3/4 cup Brown Sugar (firmly packed)
1/2 cup Sugar
4 eggs
2 cups Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
1/4 Ground Nutmeg
1/4 Ground Cloves
1 1/2 tsp Cinnamon
1 tsp Vanilla Extract
1 15 ounce can Canned Pumpkin
1 cup Mini Chocolate Chips

Chocolate Cream Cheese Frosting:

1 cup Butter
1 8 ounce package Cream Cheese
7 tbsp Unsweetened Cocoa Powder
1 1/2 tsp Vanilla Extract
3-4 cups Powdered Sugar

Straight out of the oven! Still warm!

Directions:

1. Preheat oven to 350 degrees. Line cupcake pan. Makes about 18-20 cupcakes.

2. In electric mixer, beat butter on medium speed until smooth.

3. In a medium bowl mix flour, baking powder, baking soda, salt, nutmeg, cloves, and cinnamon. Set aside.

4. Add brown sugar and regular sugar to electric mixer.

Note: Remember to scrap down sides regularly.

5. Add eggs one at a time to electric mixer.

6. Gradually add flour mixture to electric mixer.

7. Add vanilla extract and pumpkin until well combined.

8. Stir in mini chocolate chips.

9. Fill cupcake cups about 2/3 full and bake for 18-20 minutes. Once finished let cool before frosting.

Chocolate Cream Cheese Frosting:

1. Whisk powdered sugar and cocoa in medium bowl. Set aside.

2. In electric mixer, cream butter and cream cheese on medium speed until smooth.

3. Add vanilla and continue to beat on medium speed.

4. Gradually add powdered sugar mixture to electric mixer. Mix until smooth and creamy.

5. Frost your cupcakes!

Note: I used left over mini chocolate chips for garnish. You can use other candy during the fall season!

January BarkBox Review!

Don’t you love arriving home to a brown box on your front steps? “Yes, a package for me!” Correction – it’s not for you, it’s for your dog. I’ll explain.

Let’s play the who, what, why, when, and how game! Who is this BarkBox for? BarkBox is designed for your dogs! What exactly is a BarkBox? BarkBox is a special packaged gift containing 4-6 different dog products. These items can include toys, treats and/or hygiene products. They are very unique and are often items that aren’t available in the local pet stores. Treats are all-natural and generously packaged. Why does your dog receive this special gift? Your dog deserves it, that’s why! Puppies like surprises too! When do they get their BarkBox? BarkBox arrives at your mailing address every month (for however long your subscription lasts). How does this whole process even work? BarkBox is based out of New York City. It’s designed, packaged, and eventually sent to your front steps!

Now I’ll show you what BarkBox is all about! It’s great – and yes, I would know because Ani received her first BarkBox today!

The goods!

I was very pleased with the items I received!

The Petsafe fuzzy toy was interesting (in a good way). It’s the first time I’ve seen a toy like this. It’s stuffing free! No mess if your pet decides to get creative. Quoting the card in the box: “The cover conceals an inner frame that, when bitten, mimicks the sensation of crushing a rib cage. A free-floating squeaker distributes wear and tear. Legs flail when shaken, encouraging tugging and tossing.” A violent description, but she loves it!

There was a Fetch & Glow ball which was a favorite! Ani pranced around showing off her new ball. I practically couldn’t get it out of her mouth. Also, it actually glows! Now we can play fetch all day/night long. The ball was an item from American Dog Toys.

We got treats! Ani’s favorite! There were two different bags of dog treats. Both products were Gulten-Free/Grain-Free, which is wonderful. Ani has been on a Gulten-Free/Grain-Free diet since she was a small puppy and I believe it’s been extremely instrumental to her health. The two brands were Max & Ruffy’s and Primal Pet.

Wow, there was even a chew! It’s a rabbit chew by Etta Says. This chew is an all-natural premium product. They’re great for dogs with protein allergies!

Wheat-Free Dog Biscuits

“Gluten-free”, “grain/corn-free”, “100% natural”, “no artificial coloring/flavors”, “made in the USA.” Don’t these terms excite you? These terms excite me! I think it’s great that our society has focused on improving our dogs’ health. Our animals are a part of our family and they deserve to eat just as well as we do. Fortunately, so many dog food brands give them that opportunity. Isn’t that great!? I’m going to show you how to make your own wheat-free dog biscuits! They’re super easy, super fun, and dogs love them!

Ingredients:
1/2 cup Oatmeal, old fashioned
1/3 cup Applesauce, unsweetened
2 cups Barley Flour
2 tbsp Olive oil
1/3 cup Cheddar Cheese
1/4 cup Parmesan Cheese
3 tbsp Water

(I told you they were easy)

But wait it gets better…

Directions:
1. Preheat oven to 350 degrees. Line baking sheets with a nonstick baking mat or parchment paper; set aside.

2. Put all ingredients in a large mixing bowl, mix together! (manually)

3. Roll out mixture between two sheets of plastic wrap. Once mixture is rolled out, remove plastic wrap and cut out biscuits with your bone-shaped cookie cutter.

4. Place biscuits on baking sheet and place in oven for 30 minutes. Biscuits should be browned and firm.

5. When baking is finished remove biscuits from baking sheet and place on a wire rack to cool.

This mixture is extremely simple. Took seconds to combine ingredients. Formed very nice!

Don’t these dog biscuits look yummy? I think they smelled pretty yummy too because I had a couple furry friends lingering around the kitchen! (even before they came out of the oven!) Unfortunately, Ani wasn’t able to try them because I’m out of town babysitting her two friends, Riley and Sasha! I promise I’ll save you some Ani!

Riley and Sasha loved these biscuits! These are guilt-free dog treats and by guilt-free I’m talking about us! I know we all want to show our pets how much we love them and sometimes we use treats to show our love. These treats are healthy, sugar-free, and GUILT-FREE! Now that doesn’t mean we should over feed them, but it’s nice knowing that we’re loving our pet and keeping them healthy at the same time!
